Cocktail of the week: The Palomar's bumblebee – recipe | The good mixer

For The Palomar's Bumblebee Cocktail, the Palomar team has concocted a complex drink that showcases their mastery of flavors. The main ingredient here is honey and ginger syrup, which they claim serves as the perfect 'cocktail of the week'. To create this flavorful liquid, the bar managers at The Palomar soak thin slices of ginger in cold water before blending them with 20ml of water to extract a potent flavor.

The resulting ginger liquid – around 40ml – is then combined with local honey, equal parts of which are added to dissolve. This syrup forms the backbone of this cocktail, full of spicy zest from both the honey and the London dry gin. According to Ross Finnegan, bar manager at The Palomar in London, "The fresher it is, the better."

The drink itself combines 10ml of honey and ginger syrup with fresh lemon juice and 40ml of Hayman's London Dry Gin – carefully selecting a high-quality brand for this recipe. When preparing the cocktail, you simply combine these ingredients with ice before shaking them vigorously to bring everything together.

When served in a chilled rocks glass filled with fresh ice, this drink comes garnished with a thick slice of lemon – half a centimeter thick – adding an extra layer of flavor and fragrance to the taste experience.
 
just tried this Bumblebee Cocktail at Palomar and I gotta say it's a mess 🤯 ginger is overpowering everything else, don't get me wrong, but 20ml of that stuff in a drink is way too much 😷 and the lemon slice garnish is just gonna make your face pucker and ruin the vibe 👀 also, £12 a glass? no thanks 💸
 
I don't get why they even bother with all that fuss, just use regular honey and call it a day 🤷‍♂️. I mean, who needs 20ml of water to extract ginger flavor?
